Dark Farmhouse Ale with Maple

With this farmhouse ale, we wanted to highlight the earthy, spicy, and peppery qualities that can be created with certain malts and yeast. Vienna, rye, and spelt malts were chosen to achieve these flavors, as well as the specific farmhouse ale yeast strain used, which produces more peppery and spicy phenols, while also contributing fruit flavors such as dried cherry and fig. The addition of dark strong Vermont maple syrup in the kettle provides fermentable sugars to help dry the beer out, while leaving behind subtle maple sweetness, flavor, and aroma.
